Roasted Brussels Sprouts from Fat Free Vegan Kitchen. I’ve never roasted anything before. These were really balsamic-tangy and crunchy. Maybe a little too crunchy? Next time I’ll leave them in longer.
Portobello/quinoa veggie patty Whole Foods sold me for $1.99 (served at their Grill) on bread from Breadsmith, with grilled onions, tomato, and pickle (enjoy my use of the Oxford comma there–I’ve decided to start using it). Not pictured: mustard.
Protein powerhouse! Burrito bowl with quinoa, tempeh sauteed in chile lime salsa, refried black beans, and grilled onions, and baby romaine and tomato side salad that kind of ended up as part of the party. Nom nom nom.
